Berries & Oat Crumble

I used this recipe I found and adjusted it to make myself some delicious healthy breakfast.

Ingredients (serves 4)

  • 3/4 cups oats
  • 2 cups of mix red berries
  • stevia to taste
  • 1/8 cup pecan nuts
  • 1/8 cup walnuts
  • 1 tsp cinnamon + 1/2 tsp cinnamon
  • 3 tbsp agave syrup
  • 1 1/2 tbsp coconut oil
  • 200 g greek (soy) yoghurt


Preparation

  1. Wash the berries, mix them all together with 1/2 tsp cinnamon and some stevia (depending on how sweet you like your berries)
  2. In a blender, mix the oats with the pecan nuts, walnuts, cinnamon, coconut oil and agave syrup
  3. Distribute the oat mixture evenly across the berries
  4. Put in the oven at 200°C for about 12 minutes
  5. Serve with Greek (soy) yoghurt (and some honey if you like things sweet)
  6. Enjoy!

Banana Oat Cookies

I’m always looking for EASY, healthy recipes that are hassle-free and taste good. I’m especially into finding easy breakfast options, so when I stumbled across this one, I had to try it. Seriously, it’s the easiest cookie baking I’ve ever gone through. And whereas the basics are easy, you can mix it up a little by adding in different spices or toppings (raisins, nuts, chocolate, peanut butter, jam, etc). If you like them to be sweeter, you can perfectly add some honey too. It’s all up to you!

Ingredients

  • 2 ripe bananas
  • +- 1 cup of oats

Steps

  1. Mash the two bananas
  2. Add in the oats
  3. Stir until the mixture becomes one
  4. Divide into flat balls on a cooking tray
  5. Bake in the oven for 15 minutes at 200°C

Lilith

If you’re ever in Rotterdam and just like me, you are a huge fan of going out for breakfast, Lilith might just be the place for you. It’s an old bar with lots of hipster elements but a bit of a rockery vibe. I mean, the water we asked for came in a skull-shaped bottle and the music they play is mostly hard rock (in a non-disturbing kind of way!). Not to mention the food is delicious: there’s lots of options for everyone, from the bacon and eggs indulging lover (Gillian) to the vegan fruit and yoghurt bowl favourite (Me). One tip: go early! Right after we got there, the place was full and there’s a waiting line. I can understand why… :-)

When? Monday-Wednesday from 8am till 7pm, Thursdays from 8am till 9pm, Friday-Saturday from 8am till 10pm and Sundays from 8am till 9pm.
